It's heavily in the interest of bars, hotels etc. to make sure you're not ripped off or robbed. In that case, they would make all efforts to protect you and your money. Why wouldn't they? Unless, of course, the businesses were in on it, but that's highly unlikely.

Go to Profile in the drop down menu under your name (in the top right-hand corner of the forum). Next, click on the link which says Edit Profile. It's highly unlikely that a tourist would get arrested in Thailand - unless they were really asking for it. Well, for one thing, a tourist is highly valuable to the economy. In that case, bars, hotels and the like will do all they can to protect him/her and thier money.
